Pacing is so bonkers, too—first 20m was like a clip show. Characters have little depth. Felt like Cliffs Notes version of the real movie.
I wonder if the fresh noodles could be frozen. I could see making a buttload of 'em on a weekend and having frozen-fresh noodles for weeks.
You've got to mix the eggs w/ the flour either way, so this just consolidates mixing into one step. Far as I know, that's the main reason.

I THINK this is confit—you cook it in the oil at low temp but, like, don't eat the oil, so now you have garlic-infused oil for other stuff!

Apparently Junji Ito in interview (and translation notes) say the "drr" sfx are the sound of the person's flesh dragging against the walls.
