You've got to mix the eggs w/ the flour either way, so this just consolidates mixing into one step. Far as I know, that's the main reason.

I think you're thinking of copper cookware. Iron leeching isn't as big of a deal, but copper can be poisonous (Moscow mule bans).

I'm not worried about the iron leeching. Constantly cooking with acidic things will ruin the cast iron patina that takes years to get!

Ab 7000 years ago. Cast iron skillets were first seen during the Han dynasty in 220 CE. So tomatoes définitely predate cast Iron skillets.
