It was pretty easy
You get 50~60% of the weight in sliced ham. But you don't waste the rest. The bone is excellent for making stock, and the fat has it's own culinary uses. Like using it intead of oil or butter on a pan, or adding a small porting of it to any soup while cooking, some people even fry it and eat it when crispy.This is a food item that's now considered fancy but it was traditionally a way of using every part of a pig in a household. Spain in particular has recipes for absolutely every part of a pig
It's definitely forbidden. I can also see someone trying to use this as a cheap way to power an induction forge.

That's very interesting. I assume there's some kind of regulation that stops you from selling directly to restaurants or farm markets?
How/where do you sell those?
