As a chef we use a thermometer to find out. It's rare in this business that you check by feel anymore. More accurate and professional

Never understood the hate for well done steak. It's my favorite.

Sure if you don't mind chewing for 20-30 minutes...

it dries out the meat making it very tough to eat - medium well is really the furtherest it should go unless you are making a stew

this is as a chef. it is more for quality of the eat factor rather than anything else I rather not be eat tough flavourless over cooked

1) I think it's the fact of lost nutrients and in chef school you are taught that medium rare has the optimum amount of myoglobin for

2) tenderness, moisture, and flavour. I have no problem with cooking well done for someone but you're better off using a tougher cut of meat

3) and braising it till its fall apart tender. Beef cheek is actually my favourite cut of meat

People screaming about how well done is awful just end up sounding as self-important and silly as the vegan stereotype.

There is a science behind it. Source: I'm a 20 year professional chef. I have no problem with people having well done though

Of course. But if someone says a well done steak is a ruined steak, they don't know how to cook a well done steak, you know?

Very true, I think people are dumb about it and personally feel like burning it to prove a point.

I gotta admit, I enjoy it burnt sometimes as well, but that's because I like the taste of blackened burnt meat. Years of southern BBQ.
