REMEMBER! Have all ingredients ready, this is a quick pizza ready in 5-10mins
1 egg, 2 handfuls of cheese, pinch of salt - whisk together then
add about 4 tablespoons of psyllium husk (for crunch) and stir together
(I usually add a bit of oregano and garlic powder on top of the base here too)
Pour into a low heat pan and spread out, as the cheese in the base warms it makes it easier to spread out.
After just 2 mins add a dollop of your tomato puree, add oregano and garlic powder
Now add your ingredients, I put some onion, red pepper and some salami (since I couldn't find pepperoni) - salami was less than 0.5 carbs per 100g too!
Cook for just a few mins until the cheese starts to melt, either with a lid over a pan, or transfer to the oven for 5 mins to crisp up. The more psylium husk you use, the more of a "crunchy" base you can make. I prefer the golden brown style.
Keep an eye on the base... you don't want to burn it black, make sure its golden brown for a bit of a crunch... its ok for some of the edge to burn slightly too.
voila - only 2nd attemp. I was really disappointed at the almond flour, coconut flour pizzas before so tried to use the cheese and egg method with the psyllium husk to get close to a crunchy, bready, thing texture as possible.

The pizza was so good it messed up my one meal a day fasting today, but I plan to make more and pop them in the freezer for future in portions!
I did the minced chicken pizza a few days ago, and it's just too heavy - it's not close to a pizza, its basically just chicken with toppings! This one you couldnt tell it wasn't a carb or none carb pizza. cauliflower tastes like cauliflower and tasting coconut in my pizza with the coconut flour recipe was pretty grose.
This is the least insulting recipe I've found so far in terms of pizza. But if you insist on scaring the italians just do add pineapple toppings and tag an italian friend on social media ;)

mix of emmental (medium-hard swiss cheese) and a mixed 4 cheese packet

oh i know its fibre :) its good for you! the chicken nuggets and kievs i make with it are awesome
