Thieves are not targeting AI data centers. They are targeting data centers. Thieves do not care what is being hosted or not inside the building, they want the copper of electrical infrastructure. This reads like robinhood shit when we've literally seen delays building a water treatment plant because a spool was stolen.

The difference between a data center and an AI data center is immaterial, and a water treatment plant is neither.

It's not "immaterial", some data centres keep water, electricity and other utilities running, and these regular work loads consume a lot less power. Data centre is a broad term, some are owned by one organization, some are "co-lo" where multiple commercial and public organizations might put their servers, sometimes for redundancy. There's a massive difference between a few banks of windows/linux boxes and AI data centres filled with white hot GPUs.

..Water plants or other utility infra doesn't exist in isolation, they all use modern industrial control systems with servers as the control plane somewhere along the line, servers are also used for modelling demand forecasting using sensor data, previous trends, weather, time of day/year, cost etc.
