Meatballs:
1 lb ground chicken, or use ground beef, pork, or a mix
1 small shallot, peeled and minced
1 tsp garlic powder
1 tsp dry thyme
½ tsp crushed red pepper
2 tbsp extra virgin olive oil, plus more
1 egg
½ c breadcrumbs
2 tsp balsamic vinegar
Salt and pepper

Soup:
1 tbsp extra virgin olive oil
1 yellow onion, peeled and diced
8 oz cremini mushrooms
4 cloves garlic, peeled and minced
1 tsp thyme
Crushed red pepper
32-ounce jar arrabbiata sauce
4 cups water or chicken broth
Pinch of sugar
1½ cups dry radiatori pasta or use farfalle
3 oz baby spinach, roughly chopped
½ c freshly grated Parmesan
2 teaspoons fresh cracked black pepper
Salt and pepper

Combine all ingredients for the meatballs in a bowl. Add a pinch of salt and pepper and mix with your hands until combined. Roll into tablespoon-sized meatballs.

Heat 1 tbsp extra virgin olive oil in a soup pot over medium heat. Add meatballs in an even layer, cooking in batches if needed. Fry 3 mins per side until golden brown all over. They do not need to be cooked through. Transfer to a plate.

To the pot, add 1 tbsp olive oil. If you use pork or beef, you may not need the extra oil.

Turn heat to medium and add onion and mushrooms. Add salt and pepper. Cook for 8–10 mins.

Add garlic and thyme and cook for 1 min. Add crushed red pepper.

Pour in arrabbiata sauce and the water. Bring to a boil and add the meatballs. Reduce heat and simmer for 30 mins. Taste and add salt, pepper, and a pinch of sugar if you like.

Bring pot of water to a boil and add big pinch of salt. Add pasta and cook according to package instructions. Drain.

Once meatballs reach 165ºF, add spinach and cooked pasta. Simmer for 5 mins. Taste and season. Turn off heat.

Mix together Parmesan and pepper in a bowl.

Ladle soup into bowls and serve with Parmesan on the side. Enjoy!

Cloudy with a chance of meatballs

2 years ago | Likes 1 Dislikes 0

Hmmm... Does the pasta end up being mushy since you're cooking it through then adding another 5 minutes in the soup? I'd think you'd want to cook it just under before adding it in the soup

2 years ago | Likes 1 Dislikes 0

No but you can undercook by a minute or two if you want to be safe.

Hmm, nice! I forgot to add before, this sounds so good! Especially now in the fall! Thanks for sharing

2 years ago | Likes 3 Dislikes 0

Perfectly! 🤤 oooorrrrr you could slice them paper thin and fry and serve on top for a crispy garnish

I love radiatori

2 years ago | Likes 100 Dislikes 0

My grocery store started making the radiatori fresh and it’s a total game changer.

2 years ago | Likes 24 Dislikes 0

They look like little radiators. I want to try it.

2 years ago | Likes 8 Dislikes 0

How have I never heard of this? They look wicked and I want some to cook with.

2 years ago | Likes 5 Dislikes 0

These ones hold sauce so well. I like using these for red sauce, or in a pasta salad (just gotta stir/mix easy)

2 years ago | Likes 3 Dislikes 0

Had it in a truffle "mac" and cheese with smoked gouda. They do a great job of holding the sauce!

2 years ago | Likes 3 Dislikes 0

Does that make the soup "Radiatori fluid"?

2 years ago | Likes 4 Dislikes 0

I haven't found radiatori in a long time. Such an amazing pasta for holding sauce!

I have never seen it in a grocery store. Looks like Whole Foods carries it tho. And if you are lucky enough to have a Wegmans nearby. They always have cool stuff like this. Gotta drive to NY or East PA tho :(

2 years ago | Likes 1 Dislikes 0

Wegmans carried it a few years back and I loved it, but they stopped randomly

2 years ago | Likes 2 Dislikes 0

The website said it had it, but it might depend on the location. But sadly the nearest Wegmans is like 2 hours away from me :(
