Personally I think the texture looked pretty ideal for shaping, he just wasn't using a good technique. He should have had a little bowl of water to dip his hands in to keep them moist, would have completely prevented the sticking he was dealing with. Or he could have used a utensil with a more appropriate surface texture, like a silicone spatula. Or he could have placed dollops and pressed them down with another sheet of parchment. Lot of techniques better than "just rawdog it with dry hands."

(Not to crap on this guy, he's obviously just trying something new that he doesn't have a lot of experience with and that is a great thing! I love seeing people try new types of cooking, confections are fascinating and great fun. Just throwing out tips for anyone who wants to replicate this. Making it thinner with heat might work, but it might just end up making it harder to control or even messing something with the emulsification up if it causes the PB or yogurt to break).

Instead of yogurt try cream cheese with the pb, its an amazing combo. Can add whipped cream, powdered sugar, and vanilla as desired for texture and flavor.

Definitely not a healthy treat but could likely be healthier at least from what they normally eat. Fat isn't bad for you just outright. Protein also doesn't typically matter unless on GLP-1.. one chicken breast is enough protein for the day.

I recommend one change making these into buckeyes rather than the giant lollipop looking things they went with... Smaller peanut butter balls dipped most the way in chocolate worked better for things like this imo... (Toothpicks for dipping in chocolate also helps)

Shout out for the buckeye reference! And yes I agree. Much smaller peanut butter portion. I do like a hefty layer of chocolate though. But dialing in the right ratio, whatever your taste, is way easier with a smaller pop size.

These would not be shelf stable if not frozen since they use vanilla yogurt in place of what would be confectioners (powdered) sugar in a Reese's type recipe. This also means the sugar content is quite a bit lower.

I make peanut butter balls frequently (called buckeyes in some areas). Typically the recipe is PB thickened with powdered sugar, then rolled into a ball and dipped in chocolate. Personally I substitute at least half of the powdered sugar for PB fit brand peanut protein powder, and sometimes reduce it further by adding a bit of monk-sweet too. I find the chocolate is plenty sweet to not need a lot of sweetener in the PB filling
