I personally prefer the 91 remake. Kept a lot of the smart/dumb decisions balance but also took care of some pet peeves I had from the original movie.

I hate to sound like a shill from a restaurant chain, but in my experience, Outback has cooked steaks exactly as ordered, every time. Except once, and that time, they were quick to replace it and apologized that it wasn't right the first time.

#29 It gets worse when you order a steak blue. I got the real thing in an English restaurant ONE time, but even they didn't dare to serve it traditionally. It can be yucky that way, cold inside, so they put it in the oven at a low temperature for a few minutes before or after (idk anymore & what's best) they sizzled it for 2 minutes. Was A-ok that way!
Any other time (also with rare so often) the staff wouldn't dare to make it so. Maybe most patrons complain when they see spotlets of blood, idk.

Using long sous vide to convert embedded connective tissue to gelatin, and then giving it a seared surface on a hot pan or with open fire produces very nice results also for cheaper cuts which could otherwise be too chewy to eat.

As a chef some of the problem is if people get sick from what you cook it's your fault, in Canada at least. You can lose your license. and not cooking it essentially at all ups those odds substantially. I have refused to cook blue before. When I explained the customer agreed to sign a waiver.

#38 The funny thing is that bees do not really have high standards when it comes to honey. Basically, everything sugary works for them.

Years ago there was a case in Germany (I think it was here) where some beekeepers found the honey in their hives being colourful. Blues and reds and whatnot.
It turned out there was a facility nearby that had a trash dump of Smarties and the coloured sugar glazing had melted off and was collected by the bees.

Eh, calling it Germany was kind of close enough in that case. ;-) Ribbeauvillé/Rappoltsweiler is a super beautiful town, by the way. They make excellent Riesling and Crémant there, and nature is beautiful in the mountains. Highly recommended.
