Add the mango, or any fruit, after the fermentation then pasteurize everything. Sweet stuff tends to get an odd taste after a lacto ferment and IMO is better added raw after the fact.

He was on the meateater podcast. Really cool dude. He does a ton for environmental protection and public land access.

it takes about 2 hrs to clean but the saw is totally fine.
