I won't disagree that it's a silly system for it to be (basically) mandatory, but I would disagree that it's pity.
I have tipped barbers if I felt they were particularly hospitable or skilled. Cashiers rarely, but occasionally. Dentists are paid directly.

I've been waiting tables for a long time with some pretty attractive waitresses and let me tell you: drunk shameless guys ate a thing. often
Most restaurants I work out now takes those taxes out of server tips. Same thing for the credit card fees which I thinks is insane.
Don't you like to feel hosted or pampered sometimes? It's nice to have someone show you the best time possible.
Paying for quality service isn't a matter of pity. You do a great job, I'll give you more money.
