Ya I've got an old friend from highschool and were constantly sharing food ideas. And were both like, omg if we lived nearby we would be so fucking fat.
So there's this chipotle salsa I get at BiRite sometimes... mouthwatering just to think about it.... I take the finished carnitas out of the slow cooker, and set it into the frying pan squashed down flat. Flip when crispy on the side, then top with a even coat of the runny chipotle (or verde) salsa. The flavors and textures marry really well. Heat off, flip one more time. Cover with MUENSTER cheese, put the lid on until cheese is melted..... this cheese has a perfect buttery savory flavor.

Funny thing, Im shopping for tacos tonight. I'll be making a carnitas tomorrow. I make a mean carnitas.

Ooooooh I’d love to trade notes about this, I too make a mean carnitas. Do you re-fry yours for crispy edges?
METROlD
I put the oven on broil and throw it in for a bit.

Yummy. I wish I was closer, I’d bring fresh salsa and cervesas (or jaritos)
