Fun experiment you can try at home! Take a 2:1 ratio of cornstarch and water. Mix them together to make oobleck. Find a wire trivet and do the action shown in the video. Note how you can't do this with oobleck because this substance in the video is not, in fact, oobleck. I dunno what it IS, but it's not oobleck. Science!

Aerating the dough introduces small bubbles which optimizes with the dough process of "rising" which is is technically fermentation. It allows for more carbon dioxide to be released by the microorganisms in yeast when they interact with sugars.
