Aerating the dough introduces small bubbles which optimizes with the dough process of "rising" which is is technically fermentation. It allows for more carbon dioxide to be released by the microorganisms in yeast when they interact with sugars. That allows for a fluffier dough which in turn allows in very specific recipes to introduce oil into the mix, preferably virgin olive oil , lather up the dough externally ...1/2
