Pancakes

200 g all-purpose flour

30 g sugar

8 g baking powder (2.5 grams of baking soda works fine if you don’t have baking powder)

2.5 g salt

225 g yogurt or milk (I use a drinkable yogurt that has the consistency of thick milk.  Maybe whip half greek yogurt, half milk together, or try 190-200g of milk instead to keep it thick)

1 egg (large)

50 g vegetable oil (I use sunflower oil personally because it’s cheap and tasteless, but coconut oil is AMAZING as well)

3g vanilla extract

1.5g apple cider vinegar (this one is completely optional, but if you whip the milk/yogurt with just a splash of ACV it seems to help with the chemical reaction that lets everything get thick and fluffy, kind of similar to buttermilk)

1. Mix dry ingredients together thoroughly first to prevent salt or baking powder hot spots

2. Add the rest of the ingredients and simply whisk lightly (I just beat it with a fork).  Mix as little as possible, some lumps are okay, over-mixing pancakes makes them less tender and fluf

3. Cook in a thick pan on very low heat, cover it before the first flip, but leave it open after that.  These pancakes cook waaaay slower than regular pancakes.

Very calorie dense, but as for health, there's mixed information on it. Personally, it seems to work well with me. I just count calories.

I use a digital scale when I bake. It helps so much to have exact measurements so if it comes out not quite right you can add/reduce exactly

Try swapping the sugar for malted milk powder. It makes them more interesting (and way more delicious imo)

I like using two eggs to the mix and separating the egg yolks and whites. That also helps with the fluffiness.

Thanks! I’ve just made these without the egg... how amazingly fluffy. Halved the recipe in case it didn’t work eggless. Wish I hadn’t now!

It's really just a batter consistency thing, at least this recipe is. I just use a basic ladle to put the batter in a flat pan.

Dry and tasteless = overcooked box mix. Pancakes should be light and moist.

The other person that you replied to is correct. But as a bit of advice, add an extra egg in the batter and a drizzle of honey. It helps.

These are moist and fluffy. You could eat them plain but of course butter and honey/syrup is ideal, just don't drown them in it

In some recipes, absolutely not and the powder method is the better one. The soda was added as a note because I was out of powder once.
