Starting soup season off right

Homemade clam chowder. It always makes me happy.

Edit with recipe:

5 pounds red potatoes, peeled and cubed
3 cups chopped yellow onions
1/2 cup butter
3/4 cup flour
1/2 gallon whole milk
19.5 oz chopped clams, undrained
1 T kosher salt
1 tsp ground sage
1 tsp ground thyme
1/2 tsp celery salt
1/2 tsp pepper

Cook potatoes until just tender.
Saute onions in butter until soft.
Add flour and stir until smooth.
Stir in milk.
Cook over nedium heat, stirring constantly, until thick and bubbly.
Add drained potatoes.
Add clams and seasoning and bring to a simmer.

Mom makes it. Started using lactose milk for intolerant brother. I diahhrea within one hour now…

I love the milk based chowder like OP's. Apparently there is also a soup with a clear broth base, also containing clams and whatnot, and some people in Northeast America call that clam chowder. Those people are objectively wrong and do not deserve love, nor joy, nor chowder. (I'm sure it's a fine soup in its own right. But it's not chowder. I will die on this hill, and I will have clam chowder to keep me warm.)

Manhattan clam chowder is the tomato broth one. Boston/New England clam chowder is the milk based one.
