Finished product first
Pan frying the sausage, forgot to take the pictures of doing the same with the chicken
The holy trinity diced and ready to cook. 1 large onion, 2 bell peppers and 4 celery stalks
Making the rue, don't waste any of the goodness from the chicken and sausage.
1 cup of flour 2/3 cup vegetable oil medium heat
Keep stirring, don't stop. You'll see it go from white to caramel to brown.
Browning to your preference. Lost the pictures showing the rest of the assembly. Don't worry I'll make it again
Once you're at this point you mix in the veggies, broth and spices. Simmer for about an hour, add the meat back in, simmer for another 30 minutes.
Served with white rice. Enjoy!

Nice. I can’t get andouille that I like so I made my own. Followed Meathead Goldwins recipe. Turned out great. Smoked a turkey quarter and made gumbo with it. Delicious.

Odd seeing a Gumbo without shrimp or okra but to each their own. Bon appétit!

I haven't figured out how to make the gumbo not slimy from the okra, any tips I'll be happy to incorporate. Shrimp a little more expensive these days, so yea chicken and green onion sausage.

The okra slime is what makes it gumbo.

That’s completely understandable! Sorry I don’t have any tried and tested tips on making okra less slimy. Your gumbo still looks great and more importantly it’s yours, in addition to being healthy and made from scratch.

Haha no worries, I’ve definitely done that before. I’m glad it didn’t come across as mean, I always try not to be a dick about it, but tone is hard to convey through text alone.
