The coffee without milk is the espresso. It's not only a coffee by itself, but also the base for a lot of other coffees - the latte, with steamed milk; the cappucino with milk and milk foam, the macchiato with a small amount of milk or even ice cream; the long black with hot water; the americano (long black + drop of milk).
You should drink it how you want to drink it, be that strong, weak, black, white, sweet, with syrup or whatever makes you happy. Or not at all, if that is your preference.
Why change steam cups? Why not steam in a pour spout one and just pour? Or is there a special quality it gives like adding a small mist of water to the grounds to remove static to get a creamier pour of your espresso. This is far fancier than my Breville but I do like learning and good coffee
I once asked a barista why she poured from one jug to another jug. She said it's to get the air bubbles out of the milk, so the milk gets a more "velvet" (smooth) texture.
I used to work at cafe Nero, and their method for this was to think the jug with the steamed milk onto the counter to release the air bubbles. No clue if that's a better, equal or worse method, but that's what they do
You want your milk to be as chilled as possible for the best texture when doing latte art. I would keep a steam pitcher in the fridge for when I wanted to do latte art, I'm not sure why they switch, but it may be that.
There's a big price jump between a Breville espresso machine and a commercial unit. About $10,000 or more but a Breville is still a good machine for home use. Used to own a coffee shop with my now ex-wife and when we closed it we sold that commercial unit but I still use the Breville at home often. A lot of people won't notice the difference between Breville and a commercial unless you were there to try them side by side.

Since you know what you already like, I'd suggest trying a latte made the same way. Soy milk has fallen out of favor in cafes, but some still carry it, and oatmilk is also very good. Go to your nearest independent cafe and order yourself a soy latte and ask the barista if they can add two stevias when they make it (your drink will be better if they add the stevia to the espresso while making the drink, rather than you mixing it in afterwards).

But at home, lots of basic grinders have an espresso grind, just because some people like a super fine grind. There's nothing magic about an espresso grind, it's just a different setting. You can get a decent home espresso maker around $100.
There's some decent "at home" espresso machines out there in a pretty wide range of prices but the industrial model in the video starts out around $10,000 for the cheaper ones. I'll take my home coffee with my pour over as well and occasionally treat myself to a fancy coffee made by professionals.
The Gaggia Classic is generally considered to be the cheapest machine that can pull a legit professional quality shot, with the Breville Barista Express or Bambino being a small step below that.
Those are two different things. A distribution tool with needles is to break up clumps, a leveler like in this video is to get the grounds nice and level.

Not a barrista, so maybe someone can correct me, but didn't that espresso A: Come out way too quickly and B: Way too little? Doesn't look like it had time to build up any pressure, and just pissed some water through it in a few seconds.
I think the video is sped up 4x. The extraction lasts about 6 seconds on the video, so about 24 seconds of real time. That's about the right amount of time for a double (2 fl oz/60 ml).
If I'm right that this is sped up 4x, then that was maybe 20-25 seconds of real-time. It depends on how much steam power the machine puts out, but there's definitely machines out there that can do it that quickly, mine included.

My earliest example of smooth black coffee was at a Bob Evans with my mom. It's affordable, medium roasted and smooth; not really any bitter notes. I've also had fresh Kona Coffee in Hawaii that was a phenomenal balance of flavor but I'm also Vietnamese and our coffee is STRONG - medium to dark roasted; biting into a bean so you get notes of espresso and some bitterness.
Ca Phe Sua Da from Vietnamese places is iced coffee with sweetened condensed milk - it's a great blend of very dark tasteful espresso that gets interrupted with a creamy sweetness. Starbucks French Roast is a darker roast so if I'm not in the mood, I go for their pikes place medium but it's rare I buy Starbucks; the hype and everything is stupid. I don't really find Tim Hortons, McDonalds or Wendy's to be all that great either. My parents split a Panera subscription w/ me so we don't mind that.
