Because they are very fast, being designed to do lots of complex calculations, readily available and can be resold afterwards.
A lot of miners tend to under volt the GPUs to make them more efficient.

Supply isn't the issue (I mean it is kinda), one proposed solution is single-use codes given to people in waiting lists.
That is in no sense a solution. Maybe it would alleviate some problems, but when aerospace companies cant source 16-bit microcontrollers 1/2
and supply shortages on specialized hardware is shutting down automotive assembly lines, pretending this is an issue about retail 2/3
(Also, supply is the primary issue. If there were adequate supply to meet demand, scalping wouldn't be possible. Both AMD and Nvidia 1/2
have publicly stated that they simply cannot meet demand.)
