Fun fact: The health concern with raw cookie dough has less to do with the raw eggs, and more to do with the raw flour. Raw flour is actually more likely to contain salmonella and E. coli than raw eggs are. And while pasteurized flour is a thing, it's not commonplace.

Fun fact, you can't pass Cyclospora along to anyone else! It has to incubate in water for days to weeks before it can infect others. So, the positive, aside from those eating lettuce, is that it's not as widespread as something like E Coli.

Fun fact: the problem with raw cookie dough is salmonella on the flour, not the eggs. So if you bake the flour by itself first (idk what temp, Google it) and then make cookie dough, it's safe to eat! :)

Don't really need the eggs if you just gunna eat it raw though, I make my edible cookie dough with just sanitized flour, butter, sugar, and chocolate, tis amazing in icecream.

Toasted flour actually has its own nice, malted flavor and can help give a little something extra to baked goods. Kind of like how browned butter does. You just spread flour out on a baking sheet and bake it for half an hour at 350F, while stirring it around every 10 minutes or so to make sure it browns evenly.

Well, I probably wouldn't by itself, but cook it in some butter and you've got a nice roux for making bechamel or mornay sauces. The mornay can make you some killer macaroni and cheese.

That's the point for the flour though, once you cook it you've killed off the salmonella but otherwise it's unchanged, so you can then use it to make cookie dough that's safe to eat. It's more like you're sterilizing it than "cooking" it.
