The issue is most reaction videos aren't eating them properly. It'd be like someone in China taking a block of really smelly cheese, taking a big huge bite, and then having the same reaction.

The color is not from absorbing minerals but from a chemical reaction with sodium hydroxide and ammonia. It's the quicklime and soda ash specifically that does it. Also - it's not something anyone actually eats like a hard boiled egg. You slice it thin and eat it with other things. Typically congee which has no real flavor on its own. It's basically cheese or kimche or any other preserved thing.
