I was in in Hong Kong with a group of American travel writers. We had a free night so found what looked like a good restauarant. Our menus included an elaborate page explaining how fortunate we were to be in this place that was allegedlly famous for "thousand year old eggs." They then appeared on the table although none had ordered any. We never touched them. But they were charged on the bill. We loudly refused to pay. The manager finally relented and cancelled. We did not leave a tip.

they were the worst thing to find snuck into food outside of silkworms while living in East Asia. I've eaten a lot of different bugs, silkworms just pop in your mouth and taste like rotten walnuts.

They aren't that bad. It's an egg that smells kind of like dirt and tastes kind of like mushroom. Consistency is like a firm hardboiled egg. Not bad, just don't arbitrarily set your expectations.

... I kind of want to try them now. They almost sound like they're full of minerals like that and I know the shells are porous so the embryo can breathe, but I'm not certain if the color is from absorbing said minerals or not or if it'd even work like that. Either way, I'm down.

The color is not from absorbing minerals but from a chemical reaction with sodium hydroxide and ammonia. It's the quicklime and soda ash specifically that does it. Also - it's not something anyone actually eats like a hard boiled egg. You slice it thin and eat it with other things. Typically congee which has no real flavor on its own. It's basically cheese or kimche or any other preserved thing.
