Freezer & Pantry Challenge, Meal 2

Look at this plate - Dill boiled potatoes, oven baked salmon, some salad and a creme fraiche sauce of capers and lemon zest. Sound pretty ok, no? Here is what I found digging around the house:

I find a pound bag of potatoes, an opened package of fresh dill that is not so fresh, a head of salad that has to get used up or tossed and a half package of creme fraiche that is reaching the end of the road, but still smells like creme fraiche. Add the half of a lemon I had lying from another recipe and some open capers (I have no idea) that I found, and bingo, sauce. Main a giant chunk of herb marinated salmon from the freezer. Look at that chunk of salmon.

But the kicker is this: I got no idea what kind of salmon it is or how it was prepared before I froze it who-knows-when-ago. So, I smell it, and it smells like herb marinated salmon. But I can't remember if it was already prepared in any other way. So, I decide it should be ok if I bake it in the oven a bit. Should be good.

Verdict: OHMYGOODNESS it is absolutely awful. Not entirely sure why, could have been too old, baking could have killed it, no idea. Essentially, a total waste of what at one time was some damn good salmon.

Potatoes and sauce were good, and thankfully enough to fill the belly.

Looks much better than it tasted. Left it outside for the cat - wasn't touched. That pretty much sums this up.

And from the first post wondering what I should do with some frozen seafood I got down there, I have picked up some white wine and am leaning towards some risotto. That won't be until the weekend, however.

Thanks to those who have left me ideas. I got tons of pasta I need to eat up down the road, and since it is summer, throw a few pasta salad ideas this way.
