Just got back from Melbourne Sunday. That's why I'm up in the wee hours with this. Jet lag and a need for real BBQ.

Nope, all smoke, by design. It'll look like that for about 4 hours until I bring it to cooking temp (250F). It'll sit there for ~12 hours.
As stupid as that sounds, but when it's pumping smoke it's usually due to wet or crazy wood, and that can leave a terrible taste on the meat
But as I said, given its 1am I'd say you got this brother, love your work ????
