I'm going to assume because it's cold and 1am that's mainly steam. When smoking, for best results, there should be little to no smoke. 1/3

Nope, all smoke, by design. It'll look like that for about 4 hours until I bring it to cooking temp (250F). It'll sit there for ~12 hours.

As stupid as that sounds, but when it's pumping smoke it's usually due to wet or crazy wood, and that can leave a terrible taste on the meat
