12:30am: 10lb 2oz (4.59kg) brisket, dry rubbed and rested for 17 hours, about to go in the smoke. Going to be 4 hours with a 50/50 Mesquite/Oak mix. The long cook after that. More to follow.

It's just pure smoke for four hours, 250F heat & smoke for another 12 or so. It's over wood the entire time. I know what I'm about, son.

I was going to go with pecan, but it occurred to me that brisket somehow seems to need a sharper flavor, so it was oak this time.

yeah, I usually do hickory and mesquite for that bite, i just figured I'd mix it up a little- after doing some experimenting i found 1/2
