I've only had the original, which is closest to edam, but it looks like in some places they also have swiss, gouda, monterey jack, forms of cheddar, who knows what else.

Anything similar to edam (American 'Swiss' cheese) on my palate is best served warm or hot and runny. The original Babybel edam was served cold and was not palatable for 6 yo rizzle but it looked so good. To be fair, edam is still unpalatable cold to 45 yo rizzle
What? Edam is American Swiss? They are nothing alike in flavor or texture. I think you are thinking of Emmental. Edam is dutch and more buttery a little rubbery perhaps, Emmental is much harder and nuttier and is what I understand the American 'Swiss' cheese is most like.
