Those tacos haunt my dreams, partially because most places will say "spoonful of sour cream!" When like no, dollop =/= spoonful to me. So just add extra cream instead of mayo. And yeah our aioli was mayo based not house made so... old joke, what's the difference between mayo and aioli? About seven dollars

You can make a vegan mayo that’s decent with ground flax seed substituted for eggs. I’ve done a chipotle version that’s great.

*well technically it was house made in that they mixed lemon juice into mayo and Sriracha. But it was fuckin hellmans
