#1 I worked for a few months as a delivery driver for a Chinese restaurant. Those wok stoves in those kitchens sounds like a fucking jet airplane. I was scared to get within 5 ft of the stove. I also hate the fact that they dump this piping hot food into either plastic containers or Styrofoam containers. Both of those melts almost instantly, especially styrofoam. So just know that basically every Chinese food restaurant is poisoning you if they're using those containers.

I've been wondering about this for a while. How did stir-frying become such an integral part of traditional asian cuisine? Does every home in the region just, like, have a military-grade jet engine in the kitchen? Or does nobody cook this stuff at home, and just eat it at restaurants?

That's how fried rice is made. And it's why no home recipie "restaurant quality" fried rice is really restaurant quality. Unless you built a jet engine into your stove for this specific purpose. The flame makes the rice.
