Mason jars were built for preserving food that was typically also pickled, candied, or put through some other process. The idea that it would protect unprocessed food is obvious when you think about it, but...who thinks about it?
Well, somebody did, it got noticed, and a trend started. I don't think this post is crediting the trend setter for the idea so much as crediting them for bringing it up in a way that resonated.

Yeah, the video I watched said to rinse the fruit, soak in a weak vinegar/water solution, then rinse with water- again. Then, dry them on a shitload of paper towels, *then* put them in the canning jar which has also been washed, rinsed, and dried. It's baloney, just eat the fruit. This 'technique' is moronic and a waste of water, time, paper, and sanity. If you really want to preserve fruit, do it properly, using recommended canning techniques.

It is like the heat index. Humidity plays a part in how hot it feels because it negatively affects your body's ability to cool itself. Wind plays a part in how cold it feels because moving air pulls more heat away from your body. I live in SW Ohio, and this map resonates with me.

#11 it's trivially easy to resoften brown sugar though. Take a chunk of terra cotta clay (they sell tablets for this, but you can just break a flower pot) immerse it in water for an hour or so. Pat dry and then pop into the sugar bag and seal tightly. In a day or two your sugar will be moist again.
