Yeah, i feel like so many of the videos we see these days are only made so that the creator can get their face out there, they don't even give a shit about the cooking or the crafting unless it's monetized in some way, the major goal seems to be showing their face lol

I make pad kha pao a lot, and it is perfectly fine to use sweet basil ( fresh holy basil hard to come by), just a bigger handful. If you make it with chicken/ beef, instead of the traditional pork, still use it minced to get the flavour right into the meat. Also, loads of chillis!
I never bother with the egg, but it is the classic thing to do.

biggest flavor difference is using the correct basil (Holy Basil) and not regular basil. it is a different taste, and this is def one of my favorite dishes.

Well ok, but soy sauce is the basis for like half of east Asian cooking. lol Paprika(at least some decent paprika) is also hardly cheap. Anyways, you like what you like, just pointing out it's kinda like watching a video of somebody making carbonara and saying you'd make it with penne and cheddar cheese instead. lol

I normally use chicken, but for me mince chicken tastes a bit funny so I dice thigh fillets very small instead

I live in Thailand and they make graprow out of a ton of different proteins. Most often is ground pork, but ground chicken/beef, diced/sliced chicken/pork/beef, seafood(usually squid + shrimp) are all pretty common. Calling is graprow is more about the seasonings/herbs used to spice the meat as you cook it, graprow translating to Thai Holy Basil.

There’s no good replacement for a fried egg. I might suggest sliced and fried courgette though, as an alternative to the tofu suggestion.
