Our local place either does a full dip or the birria is that soaked with the juices, the thing gets completely red. It’s amazing, my favorite thing to get from them. You also get a container of the consommé too.
So you can dip the un-dipped side yourself while holding it at the pre-dipped side that is now reasonably dry to the touch since it was on the grill. And when you've dipped and eaten as much as you can without dipping your fingers in, that last bite will still taste dipped since it was pre-dipped
