That's a sloppy fuckin sandwich. At least the tortillas crisp up and give the item structure.

Every Mexico hater should try birria first and then try if any hate remains

My shirt says "Best meal ever"

Once you add a bunch of meat it isn't grilled cheese anymore, it is a whatever meat you piled on it sandwich. Looks good but isn't a grilled cheese.

Is it rude for me to take a loaf of bread to my taqueroa and show them this video and a $20 and say por favor para mi?

But...a grilled cheese with anything else other than cheese is a melt. So this is a grilled Birria Melt

Looks delicious but also impossible to eat without it falling apart and getting all over your hands, face, and probably shirt. Also this is a god damn MELT, not a grilled cheese. Downvoted. I said what I said.

Slightly related, I once had a grilled cheese with braised short ribs and sofrito. That was around 4 years ago and I still remember it fondly.

Sigh. I miss the little joint in the Mission that had proper goat birria available after the bars closed.

I must ever spread the word of the supreme arbiter of grilled cheese, may his rant ever last

1 week ago | Likes 3 Dislikes 0

It stopped being a grilled cheese, and started being bullshit slop when they added sauced meat, and onions.

That guy has a graduate degree in sandwich eating.

looks messy, but somehow gets there. Checks out.

Why the Achilles dip?

Well done

1 week ago | Likes 2 Dislikes 0

So it doesn't become too powerful

Our local place either does a full dip or the birria is that soaked with the juices, the thing gets completely red. It’s amazing, my favorite thing to get from them. You also get a container of the consommé too.

A+ description

So you can dip the un-dipped side yourself while holding it at the pre-dipped side that is now reasonably dry to the touch since it was on the grill. And when you've dipped and eaten as much as you can without dipping your fingers in, that last bite will still taste dipped since it was pre-dipped

I put my hand up on the cook's hip.
When I dip, he dips, we dip.

1 week ago | Likes 2 Dislikes 0

Whenever I try this, it just turns into mush from the dip and then further from the heat. I need to learn hot to dry it out and crisp it up

1 week ago | Likes 10 Dislikes 0

Higher heat

Hmm… good answer, I see your point, thanks

Achilles mom should have tried that

This guy dips!

Arguement...not a grilled cheese...this is a melt

1 week ago | Likes 13 Dislikes 2

Its on the grill and there's cheese

1 week ago | Likes 3 Dislikes 2

What is the difference between a melt and a grilled cheese to you

1 week ago | Likes 1 Dislikes 0

By that logic a burger is a grill cheese, a quesdilla is cheese, if you pan sear a burrito it could be a grilled cheese.

1 week ago | Likes 2 Dislikes 0

Its the "is a hot dog a taco" argument all over again

1 week ago | Likes 1 Dislikes 0

Why the fresh onions on the sandwich? Grilled onions I could totally get behind, but fresh onions just ... blech.

1 week ago | Likes 5 Dislikes 0

They put so few on there, you wouldn't notice. Salt is the deal killer these days.

1 week ago | Likes 1 Dislikes 0

presumably because the person eating the sandwich likes them, like i do

1 week ago | Likes 5 Dislikes 0

As someone who was never a fan of regular onions, I LOOOOVE red onions, even raw.

1 week ago | Likes 1 Dislikes 0

I just ordered some birria tacos from a place that makes a birria grilled cheese. I've had it, its not as good as the tacos

1 week ago | Likes 31 Dislikes 1

Burria is my go to. That bread is not holding up, a tortilla is.

I’d still try it.

1 week ago | Likes 6 Dislikes 1

Was it a weird ratio of bread to filling compared to a tortilla or something?

1 week ago | Likes 6 Dislikes 0

Bread got kinda soggy and the ratio was off

1 week ago | Likes 10 Dislikes 0

Makes sense. The tortillas barely hold up so I know bread is not going to make it.

1 week ago | Likes 2 Dislikes 0

A Ramen joint near me does a birria Ramen. I crave it weekly (Jinya for those who have one nearby).

1 week ago | Likes 4 Dislikes 0

The place I mentioned also does birria ramen, and it's very good but I tend to skip it, just like the original

1 week ago | Likes 1 Dislikes 0

Bruhhh y'all gotta get off the birria train. Charging people an extra $5+ just for seasoned meat juice is fucking criminal.

1 week ago | Likes 12 Dislikes 7

Your place is charging for the consomé? Places around here, a quesabirria ain't much more than a chicken quesadilla, and the consomé is included.

1 week ago | Likes 3 Dislikes 0

Damn, where are you going that charges that for the consomé? Never heard of that in the southwest.
