8 weeks of koji dry-aging on bluefin tuna. Beneficial Aspergillus oryzae mold—the same used for miso and sake—coats the fish, breaking down proteins and fats for intense umami and silky tenderness, much like dry-aged beef. The fuzzy exterior is fully trimmed off before slicing, revealing pristine deep-red meat enjoyed raw as a premium delicacy in top Japanese restaurants. Wild in appearance, expertly executed, and incredibly flavorful.

If you eat bad fish do you get chickenella?

Watching this activated every single one of my bones, and set them all to attack mode.

I bet that's delicious but the way he prepared it is nightmarish. I don't want a bite of that much raw fish all at once, it seems like a textural nightmare in your mouth.

Does anyone else remember those skits in Whise Line Is It Anyway? where the actors would pretend to be each other's arms? That immediately popped into my head while watching this guy eat.

5 months ago | Likes 2 Dislikes 0

Can I get an Imgr scientist to tell me if this is fucking rancid or safe to eat?

5 months ago | Likes 2 Dislikes 0

It's as safe to eat as miso, yogurt, or cheese. Some fungi are toxic and some fungi are delicious. You just have to use the right ones.

Looks like it could walk onto the plate by itself.

I am unreasonably mad at this

That is not the kind of hairy tuna I like to eat.

A big no from me dawg

5 months ago | Likes 2 Dislikes 0

I will pass on the raw moldy fish thanks.

5 months ago | Likes 6 Dislikes 0

Please, sir, can I have some less?

5 months ago | Likes 2 Dislikes 0

I'd eat it

5 months ago | Likes 4 Dislikes 0

I'd try it if prepared by a professional

What in the absolute disgusting weird ass drink out of the toilet gross shit is this?

5 months ago | Likes 3 Dislikes 0

I'd eat it no problem. Think of all the other foods we eat that rely on microorganisms: cheese for a start, fermented foods such as miso and kimchee, yoghurt and sauerkraut.

Avenge Me!!

This 100% came out of someone discovering their fish was moldy and deciding the idea of crapping themselves to death sucked slightly less than starving to death.

5 months ago | Likes 340 Dislikes 1

like 99% of "traditional rotten food"

5 months ago | Likes 1 Dislikes 0

Probably not the only food that started that way. It's not hard to imagine someone storing milk in a bag made from a sheep's stomach, maybe leaving it in the sun too long, looking at how it separated out into this gunk floating in liquid, going "fuck it, I'mma eat that" and then realizing they've discovered cheese.

5 months ago | Likes 27 Dislikes 0

Or a dare between two brothers in antiquity:

"Dude, I'll give you five goats if you pour that rotten milk over some stale bread and eat it."

"Bet" *CHOMP* "Fuck, I'm eating this everyday. We got any garlic?"

5 months ago | Likes 12 Dislikes 0

Just like Cazu Marzu (Maggot cheese) and things like frogs legs and snails. Eaten from necessity more than desire then became a delicacy (once you chuck on a metric fuckton of garlic). Snails are pretty "meh" tbh. Haven't tried Casu Marzu, but I still don't think I would even given the opportunity.

5 months ago | Likes 3 Dislikes 0

I tried snails. They kind of just taste like mushrooms with extra steps. Easier to just eat mushrooms.

5 months ago | Likes 2 Dislikes 0

I have this theory that all of the world's "delicacies" were the result of starving people figuring they had nothing to lose by trying it. Maggot cheese, rotten seal flipper, fermented shark, bird's nest soup. (really bird spit soup)

5 months ago | Likes 12 Dislikes 0

Nope. 0%.

This 100% came out of someone going, "FUCK!! I PAID $50/lb FOR THIS!! I'm just gonna slice off the moldy part!!"

5 months ago | Likes 14 Dislikes 8

I do that with $5 worth of cheese in my fridge tbh.

Hey, I learned the other that Botox originated as tainted ham served at a bar in Belgium. 34 people fell ill and 3 died.

But looked amazing all along !

And somehow managed to not end up the subject of a 30 minute chubbyemu video.

5 months ago | Likes 2 Dislikes 0

I think it 100% came out of a dare

5 months ago | Likes 2 Dislikes 0

I mean it looks fine when you cut the mold off. Tons of food is made by making it gross first

5 months ago | Likes 6 Dislikes 0

Yeah, I would imagine pretty much every fermented food or drink had its origins in someone saying "Well, it smells a little off, but I'm desperate. Oh hey, that's not so bad."

5 months ago | Likes 2 Dislikes 0

Im sure cheese was invented in a similar way.

5 months ago | Likes 1 Dislikes 0

Wait until you read about Hákarl, lcelandic fermented shark

Or like the myth about how surströmming came about, with a bunch of swedish fishermen realising they had barrels of rotten fish and decided to trick some finnish peasants with em only to return later and be asked if they had any more of that fish to sell.

5 months ago | Likes 78 Dislikes 2

Surströmming is made with less salt than salted herring would usually have been made. Maybe there was less salt available in the Northern part of the Baltic Sea & hungry people just found out that they didn't die if they ate the seemingly putrid fish.

5 months ago | Likes 1 Dislikes 0

for some reason. I'd imagine the Finnish buying it just so the Swedish would leave so they could be left alone.

5 months ago | Likes 40 Dislikes 2

I know a couple Finns. And they CONSTANTLY quip and gripe about the Swedes.

5 months ago | Likes 8 Dislikes 0

It's because of the mandatory Swedish lessons everybody has to take over there

5 months ago | Likes 2 Dislikes 1

That's because historically Sweden has given us Finns plenty to quip and gripe about. Here's a complimentary joke I like to tell: "What does Sweden have that Finland and Norway do not? Good neighbors."

5 months ago | Likes 5 Dislikes 0

Denmarkian here. I was about to comment that.

5 months ago | Likes 3 Dislikes 0

We were colonised by them for 100s of years. They killed our own religion and culture. They took our men to fight in pointless wars in Europe. When Russia was rampaging in Finland (because of Swedish aggravating them) Sweden did nothing while Finnish people were massacred. Add to that racism and belief that Finnish people are sub-human and that they need Swedish tongovern them... Why is it wrong for us to complain when Irish can complain about England?

5 months ago | Likes 7 Dislikes 1

Absolutely

5 months ago | Likes 1 Dislikes 0

Why it’s wrong? Because it is entirely anachronistic and revisionist. The Swedish kings used and ruled the peasants in the same manner whether they spoke Swedish or Finnish. The ”subhumans that needs to be governed” is complete nonsense. That sort of racial thinking appeared only long after Finland was conquered by the Russians, and only entered policy in some imperialist powers around the turn of the 20th century.

5 months ago | Likes 1 Dislikes 0

I knew some of that, some of it is new to me. I was not complaining. I like those guys, they're good people. Awful senses of humor, we get along great. I just mentioned that yeah, they talk shit about the Swedes a bunch (deservedly so!).

How does the knife not smear the mold through the cut and taint the surface?

5 months ago | Likes 36 Dislikes 0

Smear the taint surface, you say? 🤣

5 months ago | Likes 9 Dislikes 0

Remember, always front to back >.>

5 months ago | Likes 2 Dislikes 0

The mold is all throughout the fish. He's merely cutting off the fruiting bodies.

5 months ago | Likes 33 Dislikes 0

Which begs the question, “why trim?” Or, are the fruiting parts toxic?

5 months ago | Likes 12 Dislikes 1

I'm guessing it's a texture issue. Not only the hairy texture of the mold, but the dryness of the exposed outside layer of fish as well.

5 months ago | Likes 20 Dislikes 0

I still have no idea how this doesn't result in food poisoning.

5 months ago | Likes 77 Dislikes 4

He doesn't swallow on camera. I'm not convinced he actually ate any of it, just bit and chewed and probably washed his mouth out between bites.

5 months ago | Likes 2 Dislikes 2

Only some molds produce substances toxic to humans. In fact, it's suspected that the Japanese domesticated the Aspergillus flavus that had mutated and ceased to produce toxic aflatoxins, giving rise to A. oryzae, according to Wikipedia.

5 months ago | Likes 9 Dislikes 0

Just wait until you learn what yeast is.

5 months ago | Likes 6 Dislikes 0

I guess we just need to see that not all fungi , bacteria, yeasts, etc are pathogens. We use bacteria to make yogurt, yeast for bread beer and wine.
But don’t get me wrong, my Ick-O-Metre is off the charts here. And I bet I don’t make a fraction of what it would take to convince me that I am wrong.

5 months ago | Likes 3 Dislikes 0

You are gonna go nuts when I tell you about Penicillin.

5 months ago | Likes 3 Dislikes 0

Brie cheese has a rind of mold that's edible. This is much the same, since the mold is all through the meat......

5 months ago | Likes 2 Dislikes 1

A moderately well controlled environment. Clean it, colonize it, let the mold do its thing, keep bad stuff out. Its not as hard as one might think these days

5 months ago | Likes 34 Dislikes 0

I assume it's like beef, where the poisonous elements struggle to penetrate the surface layer and so the inside is perfectly edible uncooked.

5 months ago | Likes 4 Dislikes 1

Nature has some shit going on. Sometimes it's best just to go with it.

5 months ago | Likes 19 Dislikes 0

It depends on what type of mold it is.

5 months ago | Likes 56 Dislikes 0

Some people will eat anything. Like century eggs, lutefisk, durian or surströmming.

5 months ago | Likes 11 Dislikes 2

Your naming normal things, try talking about things like virgin boy piss soaked eggs or balut, and so on

5 months ago | Likes 2 Dislikes 9

Durian is delicious. Why in this category?

5 months ago | Likes 2 Dislikes 1

Because you fall in that category of "some people".

5 months ago | Likes 1 Dislikes 0

Century eggs are not aged 100 years, just to be clear.

5 months ago | Likes 6 Dislikes 4

I am aware. Still fucking nasty.

5 months ago | Likes 9 Dislikes 1

I've eaten them a long time ago. I have no particular memory of the taste so they can't have been horrible.

5 months ago | Likes 1 Dislikes 0

Cheese exists. The white fuzzy exterior of camembert, brie and similar is all mold too. Same with the blue in blue cheese. If you're careful about the species used, I can see it be totally safe.

5 months ago | Likes 26 Dislikes 1

🎶blue cheese has mold in it🎵

Oh god, why am I laughing so hard. XD Someone post a link to the video this guy is referencing, LMAO.

5 months ago | Likes 4 Dislikes 0

No no see those are things Americans like. We're supposed to point at the Asians and say how weird and gross their food is here. /s

5 months ago | Likes 9 Dislikes 5

You act like you're mocking racism, but since you're literally the person that brought race into it, you're just being racist.

5 months ago | Likes 1 Dislikes 9

Camembert and blue cheese are not american though, it's more a European thing

5 months ago | Likes 5 Dislikes 0

I said they like it not that it's from there. The point is people will often turn their nose up at foreign food they've never tried because they think it's gross but then eat stuff they don't realize is equally disgusting

I agree
