The minotaur *lives* in Toulouse at Halle de la Machine. It snorting at close range engaged some genuine primal fear. The spider lady is pretty cool too.
You should have followed it. Absolutely charming and oddly moving. I was with a friend on her first ever visit to London and she was absolutely transfixed.
Not gonna lie, as I was watching this thing saunter in I was thinking "hmm taur usually means centaur-like body but these guys are always upright" and then he kept rollin into view and I was like holy shit.
I always assumed the -taur was like the constellation Taurus, a bull, but that does lead to further questions about centaurs which are typically horse-like
Centaur probably comes from Kentauros, a nickname for a Thessalonian tribe of horse-mounted bowmen who eliminated a herd of wild bulls that were bothering King Ixion.
Well, the Taur generally refers to the human element. Hence Centaur, where the Cen refers to the horse element. Minos could be referencing the Bull of Minos, rather than the king himself. So it would be a MinoMino.
The etymology of Centaur is unclear, it came from the Greek Kentauros which originally referred to a tribe of horse riders from Thessaly, but nobody is sure why they were called that.
The etymology of Minotaur is clear though. Mino- from the name Minos, the ruler of Crete, and -taur from the Greek word "tauros" which means bull.

Is it now a Minotaur-taur?
Bi1chPudding
The Minotaur-taur you say?
GentryFriedRichFillets
Mino was because it was from Minos, which we can neither confirm nor dent in this case.
This is just a taur-taur.
At least we know they're saucy in any case.
YpsilantiRomani
Or a bull centaur
