Artist: Rook1e Song: Have yourself a merry little Christmas Recipe : 8oz brown butter
1 cup brown sugar
1/4 cup white sugar
1 egg
1 egg yolk
2 Tbsp milk
1 Tbsp vanilla extract
2 1/4 cup bread flour
2 teaspoons corn starch
1 teaspoon salt
1 teaspoon instant espresso powder
2 Tbsp toasted milk powder
1 cup dark chocolate
1/2 cup semi sweet chocolate

1.Cream brown butter and sugar
2.Add eggs, milk, and vanilla. mix on high speed till it looks like butter cream
3. Add 1 cup flour and mix
4. Add 1 1/4 cups flour, cornstarch, toasted milk powder, salt, espresso powder, baking soda mix till incorporated
5. Add dark chocolate and semi sweet chocolate and mix till incorporated
6. Portion and bake at 350 for 10-12 minutes

Yes, then you can use it like normal but have that rich brown butter taste.

Brown butter is where you melt the butter in a pot/pan on medium heat till the milk solids toast which adds a toffee, caramel, nutty flavor.

I'm skeptical about the bread flour. Typically, it has a higher gluten content, which is not ideal for cookies (it can make them tough).

Bread flour makes a chewy cookie, but that is offset by the addition of the corn starch which can make the cookie tender.

This one doesn’t need to because of the cornstarch will help to keep the cookies shape and add tenderness to the cookie

You take butter put it in a pan on medium heat. Once the butter solids brown/caramelize it will add a rich nutty taste to your butter

Yes so usually with kerrygold you lose 2 Tbsp of water when making brown butter. Instead of adding water to the butter I added 2 Tbsp ofmilk

The brown layer is the browned milk solids from the butter which settled to the bottom when I chilled the butter after browning.
