Sous steaks are always red. The process cooks the meat but the browning reaction does not take place. A quick pan fry for crust and look

Slow, low heat process carried out under a vacuum. With proteins, it keeps them very tender and moist without overcooking.

Its a cooking style, where the meat is in vacum and then places in water for x amount of hours :)
