Any kind or amount of bacteria could be passing from the skin of those coconuts to the juice/flesh and then they're being left in a container with air, fluids, and food.
Outside contamination becomes inside contamination when it cuts in half, now everything that it's touched before is inside your drink along with whatever is in the air.
If this is a yikes, wait until you see how they dehusk coconuts in some places. Or how street vendors just go and take a machete to coconuts with like barely a few millimeters distance between their fingers and the blade.
Honestly, the biggest change I'd make is a better safety feature for the coconut splitter. Make it so the operator doesn't have to be holding it during the cut and they need to press separate buttons with each hand in order to operate it instead of what I'm assuming is a foot switch. It won't make it completely accident-proof, but it will reduce the likelihood of digital dismemberment.
Two buttons shoulder width apart, or a little wider. Adds a second or two per piece, mostly from being sure the piece is situated because you can't hold it, but it's how every press at job that isn't fully enclosed is activated.
Depending on the source, processing, freshness, and additives (if any) I've found it can be a slightly sweet and tasty refreshing drink or taste like you're drinking the juice from a can of garbanzo beans.
Make a smoothie with the meat - it's completely different. You can get creative and include fruits (pineapple is a favorite), cinnamon, choc syrup... but it's lovely with just coconut.
Having drunk it in Australia, Fiji and Samoa straight from the nut - yeah, I don't care for it much. First few times I thought it tasted like beer (which I don't like), last time it just tasted like it's own thing - and unpleasant (maybe because it was a younger nut)?
