I get it, but I really hope the crash bars still open the door from the inside, in case of a fire or emergency. And I hope the fascists don't pull some fire code shit to try to punish these places. :(

Same, but the downside of that is they only need to get one person inside posing as a "normal" patron to let the others in

Yes, door latches like this work by pushing the horizontal bar toward the exit and that will always unlatch them. To put the door in an unlocked position, you push the handle in and turn with an Allen wrench in a hole in the handle
