1.) Hidden dog tax. finished result after putting together some stir fry. instructions & progress pics below:

2.) Got some NY steak on sale. I managed to have a few vacuum packed and sealed.

3.) Getting the marinade ready : 1/2 cup favorite beer/wine + 1/4 cup soy sauce, 1/2 cup mirin (rice vinegar) with a couple splashes of sesame oil, 1 tsp of pepper, garlic, and onion powder. If you want to turn up the heat, omit the garlic and go strait for garlic chili sauce (sriracha's chunky cousin).

4.) Meat thinly sliced and marinating for a couple of hours.

5.) Open flame on some skewers. Eggs rolls have been baking indirect heat 425 F for the last 10 or so minutes. Egg rolls on the grill are the best egg rolls.

7.) Finished, plated and garnished with some fancy shit.

At first I just saw two bowls of Chinese food and read "hidden dog tax." What a rollercoaster of emotion.

indirect heat + opposite hot coals = oven. more or less baked with some grill/smoke flavor.
