Time for some baby back ribs!

I've been wanting to make some ribs on my new grill since I got it back in January, but it's been too cold to do any smoking. But a couple days ago, it was a good day for smoking!

I started off with a good rub by the BBQ Pit Boys and applied it to both sides. I applied it to one side, let sit for 15 minutes for the meat to soak in the rub, and flipped it over to do the same on the other side.

I let this baby smoke for 2 hours at 275°F (135°C). I used lump charcoal and hickory for cooking and smoking.

This was the hard part. This method is called the Texas Cheat. A smoking technique that involves wrapping partially smoked meat in tinfoil (2 layers for this recipe) to concentrate the heat while preventing the juices from escaping too much. Underneath, I laid down some honey, more rub, and 5 tablespoons of butter to create a nice glaze.

And once it was wrapped back up, it went back in the smoker for 2 more hours.

In the last 10 minutes of cooking, I mixed bbq sauce with honey in a pot, that was put on the grill for 10 minutes prior, and applied the new sauce to the top. Cooking it for 10 more minutes allowed the sauce to stick better to the ribs, which will then stick to your fingers when eating.

I went outside just for a moment to come back in and find my family already devoured the ribs. This was the only picture I could take that showed it's cross section. But lemme tell you, I don't blame them. The meat was fall-off-the-bone good!
