This was my preferred letter fold in school, but since it took me a while to remember how to do this I figured I'd make a tutorial so I don't forget again, and also share the knowledge.
Start with a regular size piece of paper 8.5in x 11 in fold in half long ways or hot dog
Here is your hotdog/long ways fold
Fold one corner on the diagonal to make a square
look at that nice crease
fold it again diagonally the other way, then flip it over
This is how your diagonal creases should look when it's flipped over
fold the top down so that it's in the middle of where the diagonal creases intersect, then flip over again to the starting side
see how that crease from the backside it allowing the paper to fold up into a triangle? That's what happens when you fold it from the other side.
press the triangle down flat

take one of the corners & fold it up to meet the point at the top.
fold the other side to match, then rotate the paper to start on the other side
diagonal fold on side
make sure to crease it to help it stay
diagonal fold the other side, then flip over
now fold the top down again so that it creases where the diagonal folds meet
Make sure to crease, then flip over
once again admire the way it's trying to fold in already & flatten it down
nice flat triangle at the top
fold the edge to the top on both sides
cool, from here we'll tuck these folds under, this will help to make the interlocking part of the envelope.
tuck 1 side under the diamond
tuck the other side under so one is a diamond & the other side is 2 triagnles
flip it over
fold your triangle down, this helps the letter stay together
fold the other side down.
feed the folded triangles into the diamond to lock your letter together
