Fairly simple.
1 pound Fresh Strawberries, rinsed, hulled & quartered
1 Tbsp. Orange Juice (I had no lemon)
½ Cup Granulated Sugar
1 tsp. Cornstarch ( and enough water to make a slurry)
½ tsp Orange Zest
1. Rinse, hull, and quarter 1 lb of fresh strawberries.
2. Combine berries, juice, zest and sugar in a meduim saucepan
3. Summer on medium to low heat, for 20 minutes, stirring occasionally.
4. Combine starch with a little watter and stir well.
5. Add slurry to fruit mixture and simmer 2-3 more minutes until desired thickness is achieved.
6. Allow to cool completely. Top your cheesecake or pour sauce into a continer and store for later use.
I used my immersion blender for a few pulses to break it down a bit. This is for a birthday cheesecake. By request. I have never made one, so wish me luck.
