Assembly complete and ready for the smoker
There is a layer of the glaze and black pepper inside the weave between the bacon and the tenderloins. Caramelized onions on the top just to be safe.
Now to the smoker
There's no such thing as leftover bacon.
Halfway point
The strips of bacon were done so I had a snack while I waited.
Done in the smoke
It looks like charcoal but I promise it's not burned.
After a 15 minute rest wrapped in foil.
I scraped the onions off at this point.
Carving time.
The result.
And it tasted as amazing as you would expect.

I agree with the overcooked comments. Pork can still be a little pink as long as you hit the right temp.

Have you considered an 1/4 time on smoke, foil it for 1/2 the cooking time and then unfoiling for the last part?
