That's not hydraulic press. That's hand operated lever. Those exist for couple if millennia at least. Sure, the quality of the device is to a modern standard, but the principle can be centuries old.

It looks like it's a rack and pinion press. And it's impolite to suggest that their mother is thousands of years old.

I think it's more of a lever and a cam design. Notice it's two stage. The first stage presses everything out and second stage retract the bulk of the extractor, leaving only a small support in the center. I don't think your could do that with a rack and pinion. Your "yo mama" joke is also weak.

Unironically, I do love that humanity has an unlimited capacity to come up with new shapes of sweet bread topped in wet sugar, and that each shape gains enough individual popularity to justify its own specially crafted machinery to ensure you can make enough of them to keep up with the days demand.

There's no cereal in this one, it's almond paste, and the top is meringue, which is only distantly wet sugar. BUT APART FROM THAT... what you say is true 😁

iOS app has playback controls, though recently they’ve gotten goofy and tapping on the gif now makes it reload in full screen mode. Before you could just tap the gif and the playback controls would appear.

The texture is a bit like marzipan nut rougher, taste of almond and orange with a hint of melon. It's very good. The white part above sometimes has a lemon taste to it.
It's a traditional dessert here for christmas.

Calissons, South of France?

Calissons are from Aix-en-Provence and are made of an almond and dry fruit paste (similar to marzipan but softer and tastier) and the white part is a thin layer of meringue.
