You need a smoker. Even a versatile charcoal kettle grill can be used as a smoker in a pinch.

I would love a smoker. But I live in an apartment without a balcony, not really any place to set one up.

Oven on super low. Foil roasting pan. Foil snakes below meats. Add liquid smoke and ither goodies to bottom of pan

Cattle Boyz is the best barbecue sauce (store bought) ever! Has the right amount of kick without all the syrupy sweetness most others have.
