The cast of characters. Notes: I doubled this so 2 of each. Wound up with 14 muffins. Also, would have been easier if the apples in the filling were diced or smaller pieces. The resulting muffins were still totally worth it!
Mix the dry cake mix with the pie filling. Again, mixing and overall apple distribution would have been easier if the apples were chunks or diced. Let this mixture rest covered in the fridge for 30 minutes.
This is the streusel mixture:
1 cup of flour
½ cup quick oats
⅔ cup + 1 tablespoon Brown sugar, packed
1½ teaspoons cinnamon
½ teaspoon salt
10 tablespoons unsalted butter, melted
Just mix it all together and it should go all chunky/crumbly.
New liners for me. Less mess and no real need for nonstick spray.
I fill the liners with the batter. I use a #20 portion scoop, (search #20 portion scoop on Amazon, if you like.) 2 scoops in each well. Of course, you don't need the scoop but, it does make things easy. Then cover the batter with the streusel mixture and bake.
Bake at 425⁰ F. for 7 min. and then lower the temperature to 350⁰ F. for 24-26 min. or until an inserted toothpick comes out clean.
This combination was not my idea. I have to thank my daughter. The streusel part was my idea. I also thought if this can be done with chocolate cake mix and cherry pie filling or spice cake mix and canned pumpkin, (see a few of my previous posts) why not with other coordinating combinations? Wow! These are super good.

This used to come in a kit--bags of cake mix and topping with a small can of apples. I forget who made it, but it was a family favorite.
