Getting closer to perfection
My ideal Sicilian slice. Crispy slightly charred bottom, tall airy dough, gooey mozzarella topped with sweet San Marzano sauce and Pecorino Romano.
Simple ingredients
San marzano sauce, mozzarella, grated pecorino and some olive oil.

Tons of oregano, lots of fresh black pepper, good punch of salt & a very small amount of sugar if the San marzano isn't where I'd like.

My San Marzano sauce has oregano, salt and pepper. Everything else I've tried only diminishes the flavor. This is pie #46 btw

A true NY Sicilian slice doesn't have any of that. That's just what shitty pizza places offer because they can't make decent pizza.

If we're talking about a standard thin crust maybe you offer pepperoni and some veg.

You can judge a pizza maker only based on how good their Margherita is. Good pizza does not need any additional toppings. Kudos to OP.
