If blade in good condition use only FINE sharpening slit. Pull the knife slowly toward you while holding the sharpener. Repeat until sharp

Drag it lightly through the coarse side first, then the fine to really sharpen. Always go in one consistent direction.

For starters: Go buy yourself something that lets you choose edge angle, rather than forcing one on you.

That thing just grinds away the steel at a set angle. Look up the Spyderco Sharpmaker. Same idea, but isn't nearly as hard on knives.
