I Made a Birthday Pinapple for my Best Friend

This is my best friend Sam. Because of his birthday's proximity to Christmas, he has never had a solo birthday party...until now. I decided that this epic occasion needed an epic cake. We both love Psych, so it had to be a pineapple.

And since I love making culinary nightmares, it had to be the pazoocownicake: Part pazookie, part brownie, part cake.

1.5" deep Mini M&M Chocolate Chip Cookie Cake Layer

Followed a simple recipe for this one. Mix butter and sugars first, then add in flower, baking powder, vanilla, and anything else your heart desires. I used WAY too much, and could have easily halved this to make it work. Instead, I made this lumbering giant of a cookie cake.

Pinata Cake Layer

This was super easy. I bought this mold from Sur le Table a few months ago. It creates a pocket inside the cake where you can store goodies (because cake is just not enough anymore). I used a box recipe but added a little espresso to add zing. Bake like a bundt cake for best results.

It Begins

Okay, I forgot to get a solo picture of the Brownie Layer, but you can see it at the bottom. Simple box recipe to save time, again with espresso to make the chocolate flavors pop. I used vanilla icing to add contrast, both in color and flavor, and to keep the layers from rocking around. The Zebra Cake in the middle is for size, and because it's my friend's favorite dessert item.

The End Result

It was dense, it was decadent, and it was delicious. Everyone enjoyed, and we all went into a simultaneous sugar shock and food coma.
