I made lasagna today, with some prep work yesterday.

Here is my finished product after 1 hour of cooking.

Here I am spreading sauce I made yesterday for prep work. The recipe called for a béchamel sauce, but the person I was cooking this for prefers ricotta, which I mixed with cottage cheese.

The stacks are meat sauce, noodles long ways, ricotta/cottage cheese, meat sauce, fontina and Italian cheese blend, then noodles short ways, and the stacks continued as such.

The Italian blend was in my fridge and it had low moisture mozzarella in it, which the recipe called for.

On top is fresh mozzarella, more Italian blend, fontina, and parmesan.

Here's how it looks from the side. I forgot to spray it down with oil :/

The first slice was more picturesque, but this pic still looks good. I was told it was the best lasagna they've ever had.

Thanks for the tip! I'll remember that. Here's a tip for you, too. To avoid crying while cutting onions, rub olive oil on your knife.

I have always found that I make waaaay more lasagna than I planned to. So I’ve been making it in many smaller casseroles for individual portions(still big) with what’s left being made into one larger pan. The family is a big fan. Leftovers always get to go home.
