I use quinoa rather than rice but stuffed peppers are a great easy work lunch if you make like 12 of them on a weekend.

In my experience bell peppers take FOREVER to cook in the oven, so you gotta boil them first to pull this off, and it's a huge pain.

Cook them in the oven at 400F for 15 minutes before filling them, then cook another 10 minutes with the filling.

Yep exactly. They cook a lot quicker without the filling in them since the heat can get directly to the pepper. If you like them really soft, maybe give it an extra ten minutes.

Electric fences might be a solution for you. Harbor Freight has an inexpensive electric fence mesh blanket that's more like a screen. It's 3 or 4 feet tall, and fairly inexpensive. They sell it by the roll, but other places sell it by the foot. My neighbor used it around his chicken coops and free-range area, in an area about 50 x 50 feet. It kept foxes and coyotes out, and mostly kept the chickens in, until it blew over and they flew away. No idea how/why they didn't fly out before that. 2/2

Two on the left are pretty okay, for eating healthier you want to manage your carbs first, fat second, and the only time there's such a thing as too much fiber is if it interferes with the absorption of your meds (which can happen with Metamucil)

You go for it. I once got written up/reported to the psychiatrist while in rehab (depression after a breakup) for not wanting to eat quinoa stuffed peppers. The peppers alone will make me s*** fire, and quinoa… well… just give me iceberg lettuce for a salad or hell even plain white rice! We aren’t all built for spicy foodS! Whoa… I kind of went off there. Let us know how they turn out.

But... they have very little in common? The bit that maks you S*** fire as you put it is the capsaicin. They are the same family as tomatoes and eggplants. The word "pepper" has nothing to do with the fire you see from "spicy foods".

Why rice in the pizza one? I feel like you could just load it up with more varied pizza toppings for a better result. Now if you made a risotto and put it in, that MAY work. But just plain rice? No thanks.

If the idea is to add a carb for dough, I'd rather they just fill the whole thing with cheese and sauce and put a thin layer of dough over the top like a pie crust.

Problem with cheese is consistency at 2 inches of bulk depth. Eating 2 inches of mozzarella/provolone isn't my idea of pizza. Nor is it the best of meals flavor or nutritional wise. Now rice with lavers of cheese and sauce (or having the rice cooker with tomato powder) I can get behind. If you prefer otherwise that's cool. But I don't agree with calling the approach a mistake.

I meant in addition to the toppings already discussed. It wouldn't be just cheese. It'd be cheese, sauce, and pizza toppings inside. Hell, just layer some lasagna pasta sheets for carb content. That would add variety, structure, and would fit the theme better than plain rice.
