when I season a bird, I like to mix the seasoning with a stick of butter, then push the butter underneath its skin and flatten it out so it is evenly spread over the meat. a lot of that is just seasoning the skin.

The real irony is that we fucking love spicy food. The phaal is the hottest curry going and was invented in Britain by Bangladeshi chefs to cater to the tastes of (mostly white) British people.
