Fresh cut black bear leg
Into the cure after a week rest in the fridge. I let it go almost 3 weeks. Cure salinity was about 3%. I think next time I could go a tad salty. Maybe 4%-5%
After the cure
Smoked it at 250 until it reached an internal temp of 165. Gotta make sure trichinella is killed just to be safe.

just changed the spices a bit and used my salinity refractor to guide the amount of salt. Since it tastes like corned beef I think I'll try it in a Reuben sandwich. Experiment success!

You're allowed 2 tags a year here. High population in BC. I get as much meat from the forest as I can.

Thanks! Around here they're not protected but hunting them is seen as ethically questionable. If there's a high pop, it makes total sense

Bear is usually a different animal anyway when it comes to meat. My mom always insisted the only good way to make bear meat is stew

Trichinosis is rather common in bear. Gotta be safe and reach high enough temps to kill it

When it comes to bear every individual is different. If it was closer to the ocean and eating dead salmon the meat would be gross hahaha
